After a pretty busy day, I came home and whipped together the incredible Black Bean & Salsa Soup by Lindsay Nixon. It literally took less than 10 minutes to make. I don’t think I’ve ever made dinner that fast in my life. It’s really tasty and made from staples: black beans, frozen corn, and salsa. Not to mention it tastes really good! My father (who very rarely likes anything I make) loves it.
So if you’re in need of a warm dinner but short on time and ingredients, I definitely recommend this recipe. It’s vegan, healthy, quick, easy, inexpensive and tasty. Even if you’re not vegan, and just someone looking for an ultra quick meal this is perfect!
